Freezing is one of the simplest ways to start your journey in food preservation. I think there’s definitely a place for modern medicine, and I believe in integrative health . Fresh or dried herbs can be used for infusions, however only dried herbs must be used in honey and oil infusions meant for consumption due to the risk of botulism. Canning Preserving Method: Final Thoughts
The good news is, you can buy complete kits and all you need to provide is the fruit and storage bottles. Fermentation uses salt, naturally occurring yeast, and good bacteria to preserve the food. Common fermented foods are sauerkraut, kimchi, wine, beer, cheese, and yogurt. Some of these foods can be preserved with nothing more than salt, others need a particular yeast or bacteria added to it. Most preserving books will tell you to blanch most vegetables before freezing them.
For that reason alone, Tattler lids are not a good option for home canning. I’m very glad to see Brad leave comments in an effort save the reputation of his company, but unfortunately I will never use Tattler lids. The very fact that there are copolymers is reason enough. I will not even use the regular ball or mason lids brand new since they contain plastics.
There also seems to be an unfounded fear of using a pressure canner among new food preserving enthusiasts. As long as you follow the directions that come with your canner, it will all be fine. You will also need canning jars which are sometimes called Mason Jars or Ball Jars. I’ve found some great deals at yard sales and estate sales.

We prefer fermenting produce over pickling, as fermentation yields probiotic advantages. Pickled foods, on the other hand, are brined in vinegar so you aren’t gleaning those benefits.
